My Chemical Romance are lyrical and guitar kinda guys. Gerard Way, gotta say, amazing with playing characters.
Fall Out Boy.... come on dude, if your a chick, if your a dude, your going to like these lyrics, and Patrick's vocal? pfff no joke, some of the best in modern pop, along with those drums. Andy is one of my big inspirations as a drummer.

Say Anything and Fall Out Boy are definites. Those are my two favorite bands, and I think their lyrics are amazing. I'd also say Chiodos. I'm honestly not a huge Chiodos fan, but I really like their lyrics, and Craig Owens has an amazing voice. And Kevin Devine. I think his lyrics are beautiful, especially Cotton Crush and A Billion Bees.

I second Jason, he's awesome. Especially check out Sleeping to Dream from his live album; such good vocals and just a great song. Also the songs Forecast, I'll Do Anything, If It Kills Me, Who Needs Shelter, and Wordplay. But all of his stuff is great!
A few other recs:
Matt Nathanson (SO GOOD- lyrics and vocals are awesome- Beneath These Fireworks is one of my fave albums of his. Some Mad Hope is really good too. Plus, check out his older stuff as well)
Eric Hutchinson
The Break and Repair Method (side project of one of the Matchbox 20 guys; fantastic music)
Jesse Malin (especially the Glitter in the Gutter album)
Augustana (Can't Love, Can't Hurt was one of my fave albums of 08)
Adele

I know this is like a gazillion years later, but yeah, I'm always surprised that people don't mention Butch because he's AMAZING :) Have you ever seen him in concert? I finally saw him for the first time this March when he was in Chicago & took my friend and 'converted' her to the awesomeness. Aw, sorry that he doesn't come over there or hasn't been close to where you could have seen him. Words can't describe how awesome he is live and seeing everyone sing together and whatnot and seeing someone that you've listened to a gazillion times on your iPod live and in person, it's just..words can't describe.
My cousin's wife has met him two out of the three times she's seen him ands she said he's really nice.
P.S. Have you ever listened to any of his other bands Marvelous 3 or 1969? I know he was in a few other bands and I think one was called SouthGang but I haven't found anything of theirs yet...

Modest Mouse have some of the most amazing and insightful lyrics, in my opinion, lots of metaphors and really deep song meanings if you're into that sort of thing. I like the Over It avatar, if only because I've never really heard anyone mention them and they were a pretty decent band for the kind of music they played.
All have been said, but these are the bands that immediately come to mind:
Brand New
Death Cab for Cutie
The Postal Service
Jimmy Eat World
Say Anything
I'd like to mention Motion City, but I just can't. They definitely have some songs with great lyrics (L.G. FUAD, Modern Living, Hello Helicopter), but for the most part, their lyrics aren't terribly complex and some of their songs aren't really about much of anything (This Is for Real, Everything Is Alright). I'm also not sure Fall Out Boy should be mentioned here. While the lyric writing is generally pretty good (especially if you exclude FUCT as an album) and some of the lyrics are quite clever, they're not especially meaningful or
