My vote goes to comfortably numb. Just blew my mind the first time I heard it and still does.

I came here to say comfortably numb but that was in the op so I'd have to say All Along The Watchtower by Jimi Hendrix or all of Voodoo Child. Also Another Brick In Wall Pt. II is pretty sweet.

my favorite is Muse - Invincible, I'm not too into the crazy shred type solos, this solo is melodic and intricate and amazing

not really the best but one of my favorites is the one from Master Of Puppets, it's simple, if the guitar solo makes you air guitar along, THAT'S a good solo

Might be a strange choice but no solo gets me like the solo at the end of Beach Baby by Bon Iver, shred solos used to impress me, not really interested in them any more though.
