Considering the Kinks came out and said it was straight up better, I think Van Halen's "You Really Got Me" rendition is pretty high up there.

I saw the Melvins cover a Devo song, can't remember what it's called but it's the one that talks about tomatoes and has the really big slow synth intro, that was FRESH.

The NOFX/Rancid split album where they cover each other's songs is really great.

And speaking of NOFX Bayside has a looot of great NOFX covers, at Warped in Washington they actually played the first song (Linoleum) of NOFX's set on NOFX's instruments!
