Wow... that's actually a really tough question.
If miracles could happen, I would say Autopilot Off... if not, I'd say either Dropping Daylight or Anberlin.

think of their Acoustic EP...and any acoustic songs you have heard..they seem to be twice as good when they are acoustic, and I'd love to see it

Acceptance songs are much better acoustic.
Cartel. The two acoustic songs I have by them are some of my favorites.
And of course, The Format.

I would say Acceptance again and again, since I have seen them play acoustic before (videos are on my YouTube page). But my next choice would be The Higher (live, acoustic, I don't care! Come to the east coast!). On a more realistic level, Cartel would be amazing.

I WOULD say Sherwood because they are one of my all time favorites, but i saw them ac oustic once but it was only cuz their lead guitarist was sick, so they weren't prepared adn there was only one guitar so it was kinda lame, ask nick lopez, he was there. But aside from that yes, Cartel would be amazing, and I'd really anjoy seeing something corporate, maybe just a solo performance form andrew mcmahon with his piano. I think over all I'd say Sherwood complete, adn prepared.

thats the point, they make all their songs acoustic, young and aspiring all toned down, all the screaming as singing... it would be amazing. and opposed to the other bands listed it would be a big change in the songs, and done well would be amazing... just think about
