So yeah, I'm just hitching aboard the Conor Oberst/Bright Eyes and fun./Format trains. Can anyone help me out with where to go next? I also really like the Gaslight Anthem

Try Monsters of Folk. It's his new project with M.Ward, Mike Mogis & Jim James. Then check out M.Ward's solo stuff as well as his band with Zooey Deschanel called She & Him. For Jim Ward, check out his band My Morning Jacket
On an unrelated note Coconut Records (Jason Schwartzmann solo project) is a good start as well
