I back the Bradley Hathaway rec really hard. A Mouth Full of Dust is my favorite album of last year. It's really stark and minimalist at times but also has some well executed crescendos. If you like the conversational, faith-based lyrics of mewithoutYou, his lyrics should also appeal to you.
Nick Drake's Pink Moon is great as well.

Some artists have inconsistent discographies, so choosing a mediocre album could turn off someone who'd enjoy their better material. Also, there's always the matter of albums that are arguably the artist's best but not the most welcoming for someone who isn't used to the genre.

I realize that by "folk" you probably mean something akin to Iron & Wine or Bon Iver, but if you get the chance and want to try something a bit different, I recommend:
Townes Van Zandt (http://www.youtube.com/watch?v=2rtNH9ZuTPA)- Possibly the greatest songwriter to ever live, and if you don't believe me just ask Bob Dylan, Steve Earle or any of the several other major American songwriters he's influenced and made huge fans out of. Even Devendra Banhart, who I know a few members here dig, cites him as a large influence. He's on a level above nearly everyone to come before or since.
Guy Clark (http://www.youtube.com/watch?v=FBa5gapHGGo)- Another brilliant, yet relatively unknown Texas songwriter. He's not quite on par with the man above, but he's close.
Gillian Welch (http://www.youtube.com/watch?v=dey-K1OcjVQ) - Drawing influence from everyone from The Stanley Brothers to Neil Young, this woman stands toe to toe with anyone else around right now, male or female.
Uncle Tupelo (http://www.youtube.com/watch?v=ppiol9oetOk) - March 16-20, 1992. One of the greatest alt-country bands of all time, and I cite this record specifically because unlike the rest of their work it showcases the band completely stripped down and playing a mix of originals and traditional folk tunes. This is where Wilco and Son Volt originate, from Jeff Tweedy and Jay Farrar respectively, and in my mind neither have surpassed it.
Richmond Fontaine (http://www.youtube.com/watch?v=Wg6gnThobnk) - The Fitzgerald. Another stripped down affair from an otherwise full-fledged alt-country act, and it's likewise incredible. One of my favorite albums of the 00's.
Bruce Springsteen (http://www.youtube.com/watch?v=s-LIEr43_wk)- Nebraska. It's relatively well known and respected around these parts at this point, but worth mentioning nonetheless if you haven't heard it. The Boss shows that even without the backing of the magnificent E Street Band he's still, well, The Boss, and an excellent storyteller to boot.
This is likely not at all what you're looking for, but if you enjoy what you hear and want more stuff like it, just give me a shout.

She's sort of hard to classify genre-wise (she and Rawlings refer to themselves as being "American Primitive"), but there's definitely elements of traditional folk in there. Whether or not it's what the OP wants I'm not so sure, probably not. She's incredible regardless though.

I'm a big Neil fan, but wouldn't something like Comes A Time or Harvest fit the criteria better? His stuff with Crazy Horse is largely rock-oriented.

Simon and Garfunkel have been inactive for a good number of years, as far as writing is concerned. They fill the pop/folk void for me. Not that they "fill the shoes" so to speak, but they make music that's remotely similar to S&G.

It was the "very" that I threw in there by accident that made it seem like I wanted to say "very reminiscent of," but instead said "very in lieu of." I meant to say "I listen to Good Old War in lieu of Simon and Garfunkel because I love S&G but have beat the majority of their discography to death, so it's nice to hear something that sounds similar, but are new songs.

Okay. It was just odd phrasing, considering there have been many pop acts to play crossover Folk since Simon and Garfunkle. I thought you meant "in the vein of" or "spirit of" and misused the phrase. Still, I wouldn't necessarily say Good Old War takes the place of Simon and Garfunkle, especially in the face of so many imitators that are much closer to the sound who've been around for years.

Yeah, it was awkward wording. Like I said in another post somewhere on here, I don't think they take the place, but of the (rather minimal) knowledge of folk and folk/pop that I do have, Good Old War satiates my desires for a Simon and Garfunkle sound. I'm sure there's something better/closer sounding, but as of now, it's unbeknownst to me.

None taken, and I do know what you mean. A lot of people are lazy and don't want to sift through song after song, but, with artists that generally have over 60-70 songs recorded, it's a bit overwhelming, especially when you're fairly new to the genre.

Yeah, his voice is just phenomenal. I like that it's a folksy guitar/vibe, but the vocals are between traditional acoustic and folk music. I don't know, it's weird, the vocals aren't overly folk, yet the music is. It's a nice blend.

i would recommend Frank Turner to everyone here, Generally a bit more upbeat than most artists that have been listed. He's from the uk and started playing folk when his hardcore band Million Dead split but i hear hes finally getting some recognition in america atm. Definately start with "sleep is for the week" or "love and ire" they are his best two albums. Very smart (went to eaton on scholarship) and funny. the lyrics are brilliant if you listen carefully, not poetic but witty.

Yeah, it was awkward wording. Like I said in another post somewhere on here, I don't think they take the place, but of the (rather minimal) knowledge of folk and folk/pop that I do have, Good Old War satiates my desires for a Simon and Garfunkle sound. I'm sure there's something better/closer sounding, but as of now, it's unbeknownst to me.
Dude nothing can replace S&G. Or for that matter, really just G. Garfunkel is the one with the golden voice.

I keep meaning to check him out. I think he did a split with Jonah Matranga, who's one of my fav artists.

You cannot go wrong with Frank Turner but Sleep Is For The Week is probably your best bet. I'd also reccomend Kate Rusby, Willy Mason, and although he's not strictly folk, Get Cape. Wear Cape. Fly.

Yeah, exactly. When I made this I was getting more at lesser known acts. Thankfully, and as expected, AP did more than deliver, haha. I've got so many artists I've gotta check out now.
