What should the name be? I was thinking something along the lines of 'Cinnamon Toast Crunk'

I'm being 100% legit. My friend and I are actually doing this.
We don't have any original material so we figured we'd cover brokencyde. No one's going to expect it to be good, so its not like we can dissappoint them. We can't do much worse than the band themselves.

We have members with influences from Coheed, Piebald, Refused, and its a cool mixture of those styles without compromising our own styles.
And our lyricist is great.

Whatever you can come up with, it will be better than Brokencyde. Just make your own music. Don't waste your valuable time learning how to play that. If you want to play crunkcore or whatever, fine. But at least write some original shit. Music is a creative outlet, people only start cover bands so they can either play at bars and make money or go on shitty tours and make money. Either way, it's not really about the music at that point as much as appeasing a very specific fan base, and Brokencyde's fan base is relatively small and not likely to remain loyal for very long. If you have any creative music talent, please, for God's sake, just make some fucking rock music. Or make whatever music you want to make. But don't EVER limit yourself. As a matter of fact, if you consider not playing in a Brokencyde cover band "limiting yourself," then go for it dude. You'd be much better off making original shit though.
