I've been meaning to catch up on TV shows I've missed over the years, since I have a lot of time on my hands this summer. Currently on my list is Dead Like Me, Prison Break, and Veronica Mars. What else should I add? I'll watch pretty much anything except for Sci-Fi (Battlestar Galactica, Star Trek, etc.). I'm looking for any show, off-air or current, so give me some input.
Oh, and nothing too obvious (Arrested Development comes to mind) because chances are I've seen it.

haha I'm sure I'd like it if I gave it a chance, I just have no desire to watch it. I'm the same way with movies.

Veronica Mars is amazing. Good choice.
You should also watch the following if you haven't already:
Freaks and Geeks
Undeclared
Stella
Curb Your Enthusiasm
Dexter
The Larry Sanders Show
The Office (UK)
It's Always Sunny In Philadelphia
Lost (probably an obvious one... but an amazing show)

I completely forgot about Undeclared. My family used to watch it when it was on, and for some reason I never joined them. I think I've seen a couple episodes of The Larry Sanders Show (it sounds familiar), maybe I'll give it another shot. The rest of them I have watched/still do. 3 hours of Lost on Thursday!

I love FX series, but I'd recommend Dirt, Damages, and It's Always Sunny.
Neither of them of currently airing, but you should check out Hulu.com for full episodes. (They have at least Dirt and Sunny)
Reaper's pretty awesome.. and I think the first season of Burn Notice is about to hit dvd, also a fun show. Psych too

How you love F/X shows but didn't mention The Shield baffles me. The Shield is why F/X gets good tv.

Wow.
My bad.
The Shield too.
Or I'll rephrase: practically anything on FX except Rescue Me. (Never got into it, mostly because my dad was in the FDNY and the stuff used in the show was just to make it a million times more dramatic)

I've never heard of Mighty Boosh, but for some reason I could not get into Flight of the Conchords. I watched maybe the first 4 episodes and that was enough for me.

like someone said, besides the obvious choices of Entourage, 24, Dexter, Weeds, etc., i'd suggest The Wire and Oz.
