Darkest Hour.
They just keep getting better and more creative with each album. Especially their past two albums. Undoing Ruin and Deliver Us are both fucking incredible. They really became a force to be reckoned with after Hidden Hands of a Sadist Nation though. The two preceding that album were also good but Hidden Hands is when they finally broke away from metalcore.
Not sure where they'll go from here though with Kris leaving the band.
Between The Buried & Me is another one.

if you listen o their really old stuff and put it next to Bloodmeat.
Its crazy the difference and how amazing they have become.

Off the top of my head, Spoon and of Montreal, mostly because I listened to them both today, but they immediately spring to mind. Both definitely hit career highs with their last two respective '07 releases.

The Dismemberment Plan. The first two albums were nothing special, but those second two records are phenomenal.

see, i point to DU as proof that AFI gets better with each release. They found their sound and they build with it.
Blink did get better with each release, but they were awesome to begin with.
