Personally, my favorite hollowbody is a Tom Delonge ES-335. The Epiphone model is about $500. There's also alot of good hollowbodies from Epiphone.
You could also try an Ibanez.

Gretsch, Ibanez, and Epiphone should all be good buys in that price range but I don't have any specific rec's. What are you looking for, exactly ? One problem a lot of people get with semi-hollow guitars is feedback, but that can be solved with something like this: http://www.dougsplugs.com/ - you could probably make something similar for yourself at a much lower price...
Also, remember that the actual construction of the body and the feel of the neck is most important. Everything else can be easily upgraded with relatively little expense.

Just get a used Gibson es 335 or es 333. Craigslist usually has 6 or 7 up at a time and eBay has a bunch up too. You'll never need another guitar again

In my experience, I've often seen better quality guitars from Epiphone than Gibson in the sub-$1000 price range. There's a significant amount of overlap, where the best Epiphones are better than the cheaper Gibsons.
I played this:

Used at Guitar Center and I nearly fell in love. Out of my price range, though.
Tried an Epiphone DOT, more in my price range, and found one that had a really good build.. still need to try some more.
