Have you seen Samurai Champloo? It's from the creator of Bebop. There's some great fights throughout the series.

Bleach: Hollow Ichigo vs. Grimmjow

These fights are pretty long so I'm not posting the videos and anime isn't for everyone. They can be found on youtube though if anyone is interested.
