Is there a way to rip a dvd to your HD, remove menus/extras, and put just the bare bones movie (or tv show) on an iPod video?

Yes.
What software do you use? What is the learning curve? My girlfriend wants one for Christmas, and I want to see if this is something that she'd be able to keep up with.

I don't know what it was, but use the search function. I posted it last night in another thread.

From that program? That is up to you to decide.

ok first use DVD decryptor to rip the dvd, but you need to rip it to a VFO or IFO file, then use Videora Converter to convert the file to the proper ipod format, it works perfect for me and looks really good on TV

Use a program like DVD Shrink to knock the extras off a DVD...import it, transfer it using Videora..or I perfer PSP Video 9...its all set up already there with one click
It worked fine for me
Good luck
