I've seen quite a few, easily my favorite sub-genre of genres in general, if that even makes sense. I've been looking for more movies but I haven't been able to find anything that stands out.

Here is a list I've been able to put together from the recent years:

Horror
-Rec and Rec2
-Pan's Labyrinth
-The Orphanage

Mystery/Suspense
-Los cronocrímenes (Time Crimes)
-Secuestrados (Kidnapped) (Highly highly recommend, home invasion movie but very long drawn out scenes, incredible ending)

Drama
-Biutiful (Jarvier Bardem)
-Y tu Mama Tambien
-Obre Los Ojos

I've seen some more, but can't recall at the moment. Feel free to share and give a quick synopsis.

I need to see The Skin I Live In... Pan's Labyrinth and The Orphanage are two of my favorite movies ever... especially Pan's

I saw that you listed Biutiful (Jarvier Bardem)... have you seen Amores Perros (same director, better film IMO)

Haven't seen that one, will check it out. Also, there is another one from Spain I watched the same time as Biutiful, can't remember the title, but involved a detective and a car accident, really wish I remembered more.

Way to nit pick.

But yea, isn't foreign film considered a genre? Well, if I have a drama that happens to be in a different language, then that would be categorized in two different genres.

No, a foreign language would not be a genre.

Foreign Language isn't a genre? Tell that to any video store or categorized DVD/Blu Ray retailer.

You asked a question. A foreign language is not a genre. It's simple, really. No need to wrap your head around it. It just is what it is.

p.s. You're not a Blockbuster, duuuuude.

Foreign films can definitely been seen as a legitimate genre.
