Under the Dome is his best but it's >1000 pages, so it's fairly time consuming.

My mom liked the ending of the Dark Tower. That was actually the only part of the last book that she did like.

The Dark Tower books are great, but obviously there are more than two, haha.
I liked Cell a lot. It's one of his shorter ones, too.

I haven't read enough of his books to be of much help, but my mom is a huge fan, and two of her favorites are Insomnia and Hearts in Atlantis.
